This minty watermelon juice makes the perfect cocktail base

Food Channel Mint and watermelon agua frescaWatermelon and mint go together like Forrest Gump and chocolate. They were made for each other.

The cool, sweet herbaceousness of the mint adds some much-needed flavor to incredibly refreshing – but relatively bland – watermelon.

This recipe calls for homemade mint syrup. which really allows the mint to shine. While this works perfectly well as juice, it also makes an excellent base for a cocktail.

Vodka works well for a watermelon martini, but we also recommended trying it with mezcal instead, as the smoky flavor from this Mexican spirit really rounds out the flavor.

 

Ingredients

1/4 cup fresh mint leaves 1/4 cup granulated sugar 5 cups watermelon, peeled and cubed, seeds removed 1/4 cup fresh lime juice For garnish fresh mint sprigs

Preparation

In a small pot, bring water to a boil. Add the mint leaves and sugar. Stir until the sugar has dissolved. Transfer to a heatproof container and let chill, uncovered, for about 30 minutes. Strain into a bowl and discard the mint leaves. In a blender, combine the mint syrup, watermelon and lime juice. Blend until very smooth and strain into a pitcher. Add 2 cups of water and stir. Pour over ice and garnish with a fresh mint sprig. For a delicious cocktail, add vodka or mezcal.
